About Cari Riker

I grew up in a family that has a love for food and a passion to help people. Therefore, it was a natural path for me to join those two passions and become a dietitian. I was always fascinated with a holistic approach to healing and learning how to fuel my body to function at its best. I earned my Bachelor's degree in Food Science and Nutrition from the University of Illinois Urbana-Champaign and completed my Dietetics Internship at Vanderbilt University. Throughout my work as a dietitian over the past 10 years, I have seen an increase in complaints of digestive issues: abdominal pain, cramping, chronic diarrhea and/or constipation, stress, fatigue, social isolation, and embarrassment. People are often too embarrassed to talk about these issues. I could see their pain, and I knew they wanted more from their life. It wasn’t due to a lack of trying or motivation to change. They were just STUCK and in desperate need of help. Working with people to help them resolve their digestive issues has allowed them to regain a new lease on life with increased energy, less stress and anxiety, increased confidence, and a sense of control. When you suffer with digestive issues, you can literally feel and see the transformation it makes in your life when you are able to identify foods that work for you and foods that cause you discomfort. I have met with gastroenterologists and discussed the rising concern and the importance nutrition has on their patients’ outcomes. There are 60-70 million people in the United States with digestive disorders. Less than 50% of people with IBS even seek medical care for their digestive concerns. Many digestive issues can be managed or improved with proper nutrition. I determined that I would work with this population that needed urgent help to regain their life.
