About Meredith Palagi

Meredith is a Registered Dietitian based in the Chicago area who has worked in the health and fitness industry for the past nine years. She earned her bachelor’s degree in Culinary Nutrition from Johnson & Wales University in Providence, Rhode Island, where she learned how to merge culinary arts with nutrition science. Meredith then went on to Eastern Illinois University to earn her Master’s in Dietetics and worked at St. Anthony's Hospital in Effingham, Illinois, supporting the Diabetes Education Program.
